‘Tis the season for gorgeously rich, comfortingly-slow cooker meals that feel like a big warm hug.
Whether you’re using a slow cooker to do all the hard work for you or a conventional oven for a speedier finale, one thing’s for certain, you can’t go wrong with a comforting meal when the temperature drops.
No matter what the cuisine; a traditional French rich beef and red wine stew, an exotic and spicy Thai lamb massamun curry, or a classic crock pot Tuscan chicken stew, there’s something deceptively simple, yet so, so satisfying about a slow-cooked meal.
A particular favourite of ours are Mexican fajitas, and there’s nothing like a bit of spice to get you warm!
This recipe is not only super-simple, but it only uses 5 ingredients (no, we’re not kidding), and it’s made in a slow cooker, so that means less cooking time for you. Once mastered, you can use the fajita mix in fajitas (duh), in tacos, as a pie filling, and really anything that has a meat filling. Check it out:
500g sliced beef
1-2 sliced capsicums
1 sliced red onion
1 jar of salsa
1 pack fajita seasoning
Add salsa to bottom of the slow cooker.
Add beef, onion, capsicum and fajita seasoning. Stir to mix well.
Cook on LOW 6-8 hours or HIGH 3-4 hours.
