Breakfast. We know it’s the most important meal of the day but, quite frankly, when you’re trying to keep things healthy it can also be the most boring meal of the day. Unlike lunches and dinners where we’re often more adventurous, breakfast tends to be a monotony of oats/toast/insert-other-boring-option here. But what if breakfast could be both delicious AND nutritious? Well, your wish is our command… check out these healthy winter breakfast ideas and banish boring from your mornings!

Corn Fritters
These corn fritters (see mouth-watering image above) were developed by Hit 100, an Aussie company committed to tackling the diabetes epidemic. That means they’re low-GI, high in fibre and have more than a serve of veggies in every serve. Simple to make and super delicious, they’re the perfect choice when you’ve got a little extra time on the weekend, or you can make a big batch and store them for a quick mid-week breakfast. Carrot Muffins
A breakfast muffin that isn’t packed full of refined sugar and empty calories? No, you are not dreaming. These amazing carrot muffins are full of carrots (obvs), nuts, spices and lots of other good stuff. Developed by blogger Kate of Cookie + Kate, they make for an awesome breakfast on the run. Apple and Cinnamon Porridge

I know we made fun of oats, but the truth is that oats don’t HAVE to be boring. In fact, this recipe by Donal Skehan is anything but boring… and it’s tasty and healthy as well.
