Vitamin Packed Veggie Soup

Ingredients

  • 2 Parsnips
  • 2 Carrots
  • 1 Zuchinni
  • 1 Small Sweet Potato
  • 1/4 bunch of Celery
  • 1 Brown Onion
  • 4 cloves of Garlic
  • 1 tin Four Bean Mix
  • 1 tin Corn
  • 2 cups of Vegetable Stock

Method

1. Cut all of the veggies into 1.5cm cubes. Drain the beans and corn.

2. If you have a slow cooker, throw all of the ingredients in and cook on high for 4-5 hours. If you are using a stove top, brown the onion in a saucepan and add in the remaining vegetables. Cover with stock, bring to a boil and then simmer for 1-2hours.

3. Serve in a generous sized bowel and enjoy!
